Aloo matar

Ingredients
3 potatoes, peeled and chopped in small cubes
2 cups frozen green peas
1 onion, chopped
1/2 red chili, seeds discarded and chopped
2 cloves garlic
2x2 cm piece of ginger, peeled
400 g tomato sauce (unseasoned)
1/4 cup vegetable oil
1 tsp ground cumin seed
2 bay leaves
1 tsp turmeric
1 tsp garam masala
1/2 tsp paprika powder
1 tsp ground coriander
handful of fresh coriander stalks and leaves, chopped
salt
Directions
In a food processor, blend the garlic and ginger into a paste.
Heat the oil in a large saucepan. Add the onion and fry until slightly golden. Add the coriander stalks, ground cumin, turmeric, bay leaves and salt. Add the garlic and ginger paste and stir. Add the tomato sauce, chili, potatoes and peas. Simmer covered until the potatoes are almost soft, stirring occasionally and adding some water. Add the paprika powder, ground coriander, garam masala and stir. Simmer until the potatoes are soft. Add the coriander leaves and simmer for a few more minutes.
Serve with rice. Serves 3-4.
