Apple galettes

Apple galettes

Ingredients
Crust
2 cups flour
1 tbsp (brown) sugar
1/2 tsp salt
200 g vegetable margarine
3/4 cup very cold water
1 tsp vinegar

Directions
Apple filling
1-2 apples, sliced very thinly
2 tbsp brown sugar
1/2 tsp ground cinnamon
6 tsp apricot preserves
canola oil

In a bowl, combine the flour, sugar and salt. Add the margarine and mix until the dough is crumbly. Combine the vinegar with the water and add to the dough. Mix and gather the dough into a ball until it holds together and comes loose from your fingers. Refridgerate for about 30 minutes.

Mix the brown sugar and cinnamon in a small bowl. On a slightly floured surface, roll out the dough into a thin layer (about 0,5 cm). Cut about 15 cm wide hearts or circles from the dough with a knife. Roll the edges of each heart/circle to create a rimmed crust. Spread a teaspoon of apricot preserves in each crust. Place apple slices on each crust. Spray the apples with a bit of canola oil and sprinkle with the brown sugar mixture. Bake in a preheated oven for about 25-30 minutes, until the edges of the crusts are golden brown. Serve warm.
