Baingan Bharta
Baingan Bharta is a spicy Indian eggplant curry.

Baingan Bharta

Ingredients
2 medium eggplants
4 medium tomatoes
1 large onion
2 green chillies
1/2 tsp ground coriander
1 tsp ground cumin
1 tsp Garam Masalat
2 cloves garlic
2 x 2 cm piece of ginger
small handful of fresh coriander
about 3 tbsp vegetable oil
salt

Directions
With a fork, prick the skin of the eggplant in several places, slightly brush the eggplants with oil and bake in 175 degrees C until the eggplants have become very soft. Let the eggplants cool, remove the peels and mash the eggplants with a fork until you have a fairly consistent mixture.

Heat vegetable oil in a pan, add finely chopped onion and ground cumin. Mix and fry the onion for a few minutes, until transluscent. Add finely chopped chilies, garlic and ginger (use a food processor to chop garlic and ginger finely). Add some salt and mix. Heat about one minute and add finely chopped tomatoes. Mix and add the spices. Cover with a lid and heat for a few minutes, stirring occasionally. Then add the mashed eggplant. Mix well and cook for a few more minutes under a lid. Add more spices if needed.

Serve with rice. Garnish with freshly chopped coriander. Let the dish stand a few minutes before serving, for flavours to blend.
