Bulgur with eggplant

Ingredients
about 2 cups of bulgur
half an eggplant, sliced
1 onion, chopped
2 cloves of garlic, chopped
olive oil
salt, pepper
rosemary
Italian herbs
Directions
Boil the bulgur. At the same time, fry the onion and garlic in olive oil, add some salt and pepper. Set aside. Fry egplants in oil, add salt. When the bulgur is soft, drain it and place it in the pan where you fried the eggplant. Add the fried onion and garlic. Add some salt if neccessary. Add pepper and the herbs. Stir.
Serves 2-3 people.
