Chanterelle mushroom sauce



Ingredients
200 - 300 g yellow chanterelle mushrooms, washed and chopped
1 onion, chopped
some vegetable oil to fry the onion
2-3 tbsp of flour
200 ml soy cream
salt, pepper
boiled potatoes to serve the sauce with
Directions
Fry the onion in olive oil until slightly golden brown, add the mushrooms, salt and pepper. Heat the pan with the lid on for a few minutes, until water starts to come out of the mushrooms and they shrink a bit. Stir the mushrooms and add some water. Add the flour and stir, gradually add the soy cream. Add some water if necessary, stir everything and heat on a low fire for a few more minutes.
The sauce can be made with other mushrooms as well, but the chanterelle mushrooms are my personal favourites as they have a unique and very pleasant taste.
Serves 2-3.
