Coconut curry

Ingredients
1 onion, chopped
1 cup of mushrooms, sliced
half a zucchini, sliced
about half a cup of coconut milk
1 tomato, chopped
1 red or yellow or green pepper, chopped
kidney beans (optional)
frozen vegetables (optional)
salt
curry
vegetable oil for frying

Directions
Fry the chopped onion in oil, until soft. Add the mushrooms and after some time the zucchini. Heat for about 5 minutes or until the zucchini is soft. Add the tomato and pepper (and beans and/or vegetables). Heat for another couple of minutes. Then, add the coconult milk and curry. Mix everything and heat for another few minutes.

I like to eat this dish with rice.
