Coconut rice

Coconut rice

Ingredients
125 g of (brown) rice (1 bag)
1 onion, chopped
2 cups of frozen vegetables (I've been using the mixture of carrots, peas, cauliflower, brussel sprouts etc), optional
1 cup of coconut milk
some oil for frying
curry, optional

Directions
Boil the rice. While it's boiling, fry the onion and after a few minutes, add the frozen vegetables. Heat on low fire until the vegetables are soft. Add the rice and coconut milk. Mix everything and add the curry. Heat for a few more minutes.

Alternatively, pour the coconut milk, some water, onion, unboiled rice and some salt (and vegetables) in an oven dish and bake until the rice is soft. Meanwhile, add some water to the rice if necessary.

Serves 2.
