Couscous salad

Ingredients
1,5 cups of couscous (granular pasta of North African origin, made of semolina flour)
1 onion
3 tomatoes
olives
green, red or yellow pepper
some (olive) oil
lemon and mint (optional)
any other vegetables you would like to add, such as cucumber (chopped) or chick peas
some salt and black pepper
Directions
Boil the couscous shortly or soak it in water for a while. Chop the onion and fry it with oil. Chop all the other ingredients and mix everything with couscous once it's ready. Add some more oil to the salad. If you are using lemon, squeeze the juice in the salad and if using mint, chop the leaves in the salad. Add the spices.
This amount is for 2-3 people. The salad could be eaten warm or cold. As the salad is light and refreshing, it's especially good in the summer.
