Eggplant rolls

Ingredients
1 medium eggplant
100 g walnuts
some fresh parsley
3 cloves of garlic
some coriander
1 onion
salt, pepper and some vinegar to taste
vegetable oil for frying
Directions
Cut the eggplant lengthwise in thin slices, sprinkle with some salt. Fry them in oil and allow to cool. Prepare the stuffing: mash the walnuts and parsley in a food processor, chop the garlic and onion in small pieces (or use the food processor). First fry the onion and garlic in some oil, then add the mashed walnuts and parsley. Finally, add the spices and mix everything. After that spread the stuffing on each eggplant slice and make the rolls.
The amount should be enough for about 6-7 rolls.
