Lentil soup

Ingredients
1 cup of (red) lentils
1 onion, some vegetable oil
1 carrot, chopped
2 potatoes, chopped
1 cup frozen vegetable mix (peas, cauliflower, broccoli, brussel sprouts etc.) (optional)
1 vegetable stock cube
spices, such as salt, pepper, curry, cayenne pepper etc.
parsley
lemon (optional)

Directions
Chop the onion into small pieces and fry it in oil. Start boiling the lentils in plenty of water, after about 10 minutes, add all vegetables and the fried onions. Boil until lentils and vegetables are soft, add the stock cube, spices and parsley and boil about 5 more minutes. Sqeeze some fresh lemon juice in each plate when serving the soup.
