Whole wheat pasta with mushrooms in creamy sauce


Ingredients
1 small onion, chopped
2 cloves garlic, minced
a bit of white wine
5 sundried tomatoes, chopped
handful of ruccola
1,5 cups whole wheat pasta
about 70 g mushrooms, sliced
olive oil
150 g vegan cream
salt and black pepper
Directions
Boil the pasta in slightly salted water. While the pasta is boiling, fry onion and garlic in olive oil for a few minutes. Add the mushrooms and fry until water has come out of the mushrooms. Add a bit of wine and the cream. Stir and add salt and pepper. When the pasta is almost soft, add ruccola in the water and boil for another minute. Drain the pasta and add it together with the ruccola to the cream sauce. Stir and add the sundried tomatoes. Serve immediately.
