Potato casserole

Ingredients
1 -2 onions, chopped
5-6 medium sized potatoes, peeled (you don't need to peel new potatoes), thinly sliced
1/4 cauliflower
50-100 g mushrooms, thinly sliced (optional)
1 tomato, sliced (optional)
1-2 carrots, grated
some olive oil
200 ml vegan cream (for example GoGreen)
some curry powder
some salt
Directions
First spread some oil on the bottom of a round deep oven dish. Start filling the dish by first placing some potato slices on the bottom as first layer. Add some onion on the potato slices, then some cauliflower, carrot and some mushrooms. Sprinkle some oil and spices on it. Repeat the layering until you run out of the ingredients or until the dish becomes full. Finally, pour the cream evenly on the dish and let it sink to the bottom. Bake in medium heat for about 1 hour, or until the potatoes and the cauliflower have become soft.
Serves 2-3 people.
