Rich vegetable soup

Ingredients
about 1,5 litres water
2 vegetable stock cubes
vegetable oil
1 onion, peeled and minced
2 carrots, peeled and sliced
3 potatoes, peeled and cut in cubes
1 tomato, chopped
1/2 paprika, seeded and chopped
1 red chili pepper, seeded and chopped
1/2 cups dry yellow peas (I used halved peas)
a little salt if necessary
herbs: basil, coriander, curry, paprika powder, ground nutmeg, ground black pepper
3/4 cups coconut milk
2 bay leaves
Directions
Add the water into a medium sized pot and bring to boil. Add the peas, potato, onion and carrots. After a while, add the paprika, tomato, vegetable stock cubes and bay leaves. Boil on low heat until the potatoes, carrots and peas are almost soft (the peas take the longest). Add more water and stir. Add a bit of vegetable oil and all the spices. Once the peas have become soft, add the coconut milk and bring the soup to boil once more. Remove from heat and serve.
Serves 3-4.
