Tarka dahl
Tarka dahl is an Indian curry made with lentils.

Tarka dahl with coconut rice

Ingredients
1 cup red lentils
some fresh ginger, peeled and finely chopped
2-3 tbsp vegetable oil
2 cloves garlic, finely chopped
1 tsp turmeric
1 tsp cumin seeds, slightly crushed or cumin seed powder
1-2 tbsp fresh coriander stalks
handful of fresh coriander leaves, chopped
1 red chili, seeds removed and finely chopped
salt
some garam masala

Directions
Put lentils in a pan and cover with cold water, add some salt and bring to boil. Remove the while foam from the lentils and turn the heat low. Add the turmeric and ginger, stir and simmer until the lentils are tender. Add some more water if needed. Meanwhile, fry the garlic, chili, cumin seeds and coriander stalks in oil for a few minutes, add some salt. Add to the lentils and stir well. Add garam masala, stir and simmer for a few more minutes on low heat. Turn off the heat, sprinkle the coriander leaves on the dish and before serving, leave the dish to stand for a few minutes under the lid. Serve with rice.
