Tomato-cashew dip

Ingredients
2 large ripe tomatoes
2 cloves garlic
50 g cashews
2 tbsp olive oil
some salt
cayenne or chilli pepper (optional)

Directions
Blend cashews and garlic in a blender and food processor, until you have a fine and smooth mixture. Core the tomatoes and add them to the blender. Blend until the sauce is smooth. Add salt and pepper if desired. Add olive oil and mix.

This sauce is also great on pasta. Serves 2-3 as dip or 1-2 as pasta sauce.
