Vegetable bread


Ingredients
half a bell pepper (I used red), sliced
about 200 g of mushrooms, sliced
or
about 10 carrots, boiled and chopped
1 -2 onions, chopped
salt, black pepper
about 1 cup whole wheat flour
about 1 cup barley groats
2 dl vegan cream (I used Keiju)
1 tsp baking powder
some water
breadcrumbs
about half a cup of canola oil and some for frying
Directions
First fry the onions with pepper and mushrooms or carrots in oil. Add salt and pepper and stir. In a larger dish, mix the flour and groats and baking powder, add the vegan cream and about half a cup oil and some water. Stir. Add the vegetables, stir. If needed, add more water. The mixture should not be too thick. Grease the bottom of an oven dish (about 20 cm in diameter) with oil and sprinkle with breadcrumbs. Place the dough in the dish and bake about 45 min in medium heat.
